As one of six children, his parents taught him how to utilize product to their fullest extent. His father taught him how to work with the land to obtain the best harvest. His mother taught him preservation techniques to utilize the harvest throughout the year.
Brian has two extensive vegetable and herb gardens, and raises chickens for fresh eggs. All produce is grown with organic compost and is always herbicide and pesticide free. Brian uses seasonal ingredients as much as possible and menus usually reflect that effort. His food is “simple, elegant, beautifully presented, and delicious.”
He spent over 20 years in the restaurant and catering business in Madison, Wisconsin and Santa Fe, New Mexico, and was fortunate to work with some excellent chefs and caterers developing a unique sense of flavors and an acute eye for detail. Brian mastered numerous types of cuisine with the focus always coming back to using the finest local and organic ingredients. All menus are customized to clients’ specific needs and desires.
